Ingredients

  • 4 Oroweat® Keto Tortilla
  • 1/4 cup (60ml) Olive Oil
  • 2 (60ml) Lime, zest and juice
  • 1/2 cup (12g) + 2 tbsp (3g) Cilantro, finely chopped, divided
  • 3 Garlic Cloves, minced
  • 1 tsp (2g) each Cumin and Chili Powder
  • Salt and Pepper to taste
  • 1 lb Strip Steak or Flank Steak
  • 2 tbsp (20g) White Onion, finely diced
  • 1/4 cup Cotija Cheese
  • 4 Radishes, thinly sliced
  • 1/4 cup (60ml) Chimichurri Sauce, store-bought

Preparation

  1. In a large glass container, combine olive oil, lime juice and zest, 1/2 cup cilantro, garlic cloves and spices. Marinate steak in the mixture for 15 minutes, or up to 1 hour.
  2. Heat a grill pan on high heat and grill the steak to medium rare, about 4 minutes on each side. Let it rest for 2 minutes under tin foil and cut into 1/2-inch-thick slices.
  3. Divide the meat between Keto Tortillas, and top with white onions, cotija cheese, radishes, chimichurri sauce and the rest of the cilantro.
