White Bean & Artichoke Vegan Toasts

Ingredients

  • 2 cups marinated artichoke hearts
  • 1 cup cannellini beans - drained
  • 2 tablespoon toasted pinenuts
  • 2 tablespoons lemon juice
  • 2 cups baby spinach
  • 1/4 cup italian parsley chopped
  • boston lettuce
  • chopped scallions

Preparation

  1. Drain the artichokes, reserving 1 tablespoon of the marinade. 
  2. Char in a grill pan on medium heat. 
  3. Combine in bowl with reserved marinade, cannellini beans, pinenuts, lemon juice, baby spinach and parsley. 
  4. Toast Oroweat Organic 22 Grains & Seeds
  5. In a skillet, brown the Oroweat Organic Quinoa & Sunflower Seeds
  6. Serve on toasted bread, layered with lettuce and sprinkled with chopped scallions for crunch.
