Ingredients

250g of chickpeas (400g can – drained)

1 small fennel - finely chopped

6 scallions – thinly sliced

4 dill pickles – finely chopped

1/2 red pepper – finely chopped

1/2 cup vegan mayonnaise

1 clove of garlic – minced
-
3 teaspoons powdered hot mustard

2 tablespoons tarragon
-
1/4 cup lemon juice
-
salt and pepper

4 leaves of romaine lettuce - chopped

8 slices of Oroweat® Organic 22 Grains & Seeds
Preparation
- In a bowl, mash together chickpeas.
- Stir in fennel, scallions, pickles, red pepper, mayonnaise, garlic.
- Add in mustard power, tarragon, lemon juice and season to taste.
- Toast the bread, if desired.
- Layer onto bread with Romaine.
