Ingredients

Pickled Vegetables

  • 3 carrots – julienned
  • 2 zucchini – julienned
  • 1/2 cup rice vinegar
  • 2 teaspoons brown sugar
  • 1 teaspoon salt
  • 1 340 g package of extra firm tofu
  • 2 cloves of garlic – minced
  • 2 teaspoons ginger - freshly grated
  • 2 teaspoon chinese 5-spice
  • 1/4 cup soy sauce
  • 1 fresh birds eye chili – minced
  • 1/2 cup vegan mayonnaise
  • handful of cilantro
  • handful of mint

Preparation

  1. Prepare the pickled vegetables by mixing the vinegar, sugar and salt in a small pan and bring to boil over medium heat. 
  2. Pour over julienned vegetables and set aside to cool, until ready to use. 
  3. Slice the tofu into 4 slices (approximately 1/4" thick). 
  4. Heat oil over medium heat grill pan or skillet and add tofu. 
  5. Cook until dark and crispy, about 5 minutes per side. 
  6. Heat oil over medium heat grill pan or skillet and add tofu. 
  7. Spread vegan mayonnaise evenly across 4 slices of Oroweat Organic Quinoa & Sunflower Seeds
  8. Top with grilled tofu, pickled vegetables, cilantro and mint.
